Baked Cauliflower with Cheese

Ingredients:

  • 1 medium cauliflower, cut into small florets
  • 1 teaspoon of salt
  • 2 tablespoons olive oil
  • 2 eggs
  • 30 ml cream (approximately 2 tablespoons)
  • Black pepper, to taste
  • Grated Parmesan cheese (around 50 g, or to taste)
  • 100 g soft mozzarella, torn into small pieces
  • Paprika, to taste

Instructions:

  1. Prepare the cauliflower:

    • Preheat your oven to 200°C (392°F).
    • Bring a pot of water to a boil. Add a pinch of salt and cook the cauliflower florets for 5 minutes.
    • Drain and pat the cauliflower dry with a kitchen towel to remove excess moisture.
  2. Roast the cauliflower:

    • Spread the cauliflower florets on a baking sheet. Drizzle with olive oil and toss to coat evenly.
    • Roast in the preheated oven for about 10 minutes, until the cauliflower begins to turn golden.
  3. Prepare the egg mixture:

    • In a bowl, whisk together the eggs, cream, black pepper, and a generous amount of grated Parmesan cheese.
  4. Assemble the dish:

    • Transfer the roasted cauliflower to a greased baking dish.
    • Pour the egg mixture over the cauliflower, ensuring it’s evenly covered.
    • Add more grated Parmesan cheese and tear the mozzarella into small pieces, sprinkling it over the top.
    • Sprinkle paprika on top for extra flavor and color.
  5. Bake the cauliflower cheese:

    • Bake in the oven for another 20 minutes, or until the cheese is melted and the top is golden brown.
  6. Serve:

    • Allow the dish to cool slightly before serving. This can be enjoyed as a main dish or a side.
