- Preheat the Oven: Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish with oil.
- Soak the Breadcrumbs: In a small bowl, mix the breadcrumbs with the milk. Let them soak for 5 minutes.
- Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, soaked breadcrumbs, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and dried thyme. Mix thoroughly.
- Form the Meatloaf: Shape the meat mixture into a loaf and place it in the prepared baking dish.
- Make the Topping: In a small bowl, mix the ketchup, brown sugar, and Dijon mustard. Spread this mixture over the top of the meatloaf.
- Bake the Meatloaf: Cook in the oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
- Prepare the Mashed Potatoes: While the meatloaf is cooking, place the diced potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until tender. Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth. Season with salt and pepper to taste.
- Combine and Finish Baking: After the meatloaf is done baking, spread the mashed potatoes on top of the meatloaf. Sprinkle the grated cheddar cheese on top. Broil for 3-5 minutes, or until the cheese is melted and bubbly.
- Serve: Let the meatloaf sit for 10 minutes before slicing and serving. Garnish with chopped parsley.
